If you mean the boogies that Zakum summons, then yes, Hermits will wipe those out with Avenger... AND NOT JUST HERMITS. All attackers, too! Because those get caught in their line of fire! Aerial summons by Zakum were always taken care of by mages pre-4th job because Hermits had this sucky mechanic back then called claw-punching when things got too close. If you mean the random flying summons, if they're not flying into the mages, chances are, they're not flying into the rest of the team. If they fly low, then they'll get caught in the line of fire and die the same way boogies do.

-sigh- This is pointless.
I have played a mage at 3rd job zakum runs, they are horrible at mob controlling. A hermit handles the flying summons perfectly fine and better than a mage.
If the summons fly up and then down into the team they are ontop of the team. And some of them are immune to certain elements, mages really aren't that good at mob controlling in third job compared to hermits at zakum. But whatever, believe what you want, i've been there tried it and seen it.
