The GS and EE chips were supposedly removed from newer models. Some older models after the 80Gig models still had the GS chip for software emulation. Only the original 20 and 60 gig models still had the GS and EE chips.
Emulating the PS2 would take a lot but with High Level emulation in which a dynamic recompiler or interpreter is used to translate calls to the Cell CPU and a proper driver for the Nvidia RSX written, then it technically could happen. Compatibility would be sketchy at first, but over time it could get very good.
But I have heard where a group of hackers did use a cluster of PS3s to crack the SSL algorithm.
