A Little Confused About Dex per w.atk and how it differs from STR-less to low STR

Going strless is beneficial early on especially because you don't have a ton of AP yet, so the extra dex you get is good. You'll be stronger earlier on, and you'll have an easy time planning your str for the weapon you plan on using. A lot of the things that give str have high level requirements, such as the 100/120 overall, shoe if you don't use facestompers, and mark of naricain. You also won't have to switch out weapons every few levels to keep up your damage, just go straight from crow to nishada, then to the weapon you plan on using after adding str.
