That's why I tend to just bring everything with me that I would likely need on a quest, with the exclusion of Capturing supplies. Then I remember the number of item slots I use, so when I go to restock my inventory I don't accidentally forget something. I often spend over a minute trying to remember what's missing though.
Right now every run I go on includes: Potions, Mega Potions, Antidotes, Cool Drinks, Hot Drinks, Well-Done Steaks, a Powercharm, an Armorcharm, Dung Bombs, a Farcaster, Mega Pickaxes, Mega Bugnets and Whetstones if I'm going Blader. As a result I know my inventory should always have 12/13 items, and if it doesn't I scourer my box until I realize what I'm missing. Eventually I'll add a Powertalon and Armortalon, but I don't want to waste the Jho claws I have yet.
As long as you don't need the inventory space, I would suggest doing the same thing. Keeping a page open for carves and what not should be enough, so 12-16 items you always have on you should be fine. If you're going gathering you don't need any of that crap so there's no real big deal about having a 2/3rds full inventory when you start a hunt. It also doesn't hurt to have the items you need in case a second monster shows up, since that's random. I tell you, I've saved myself a lot of headaches by doing this.
