Although I hate this term mostly because of what the GameFAQs people have turned it into, I consider myself a veteran player.

As for the rest of your post, it's like bolding, italicing and underlining the word OPTIONS wasn't enough for you to read it. No-one is rage quitting Fire Emblem because they added a casual OPTION that makes the game easier for people who were scared away by the previous games uncommon choice of perma death; those are all really simple options that they could add to MH to make it a much more attractive game to people who aren't die hard MH fanatics right now. It's not like it'd kill you flip a menu option to "off" if you really wanted to play your version that is counter intuitive to what people have learnt from virtually every other 3d action adventure game.
Although I understand what you mean in regards to options like Health Bars, easier play, etc., the issue with that is people will use those options, then get good gear, then go online and fail missions for people who are playing regularly. It happens all the time already, I feel like making it easier for single player will simply make those issues significantly worse.
Also, the entire concept of the game compared to what US players want creates a serious issue of difference between JP players and US players. Monster Hunter is absurdly popular in Japan. The reason MH4 and the more massive titles beforehand were all on handhelds was because that's how people play more often than not in Japan. There was a study at some point that I read that said that 75-80% of PSPs in Japan had MHP2G in them at any given time. Of course, it's not possible to really confirm the authenticity of that, however considering they have Monster Hunter themed everything, I would not be surprised at all if it were true.
This creates a serious issue where what we want doesn't really matter, because we don't have nearly the fanbase the game does in Japan. These things that US players want are not things that JP players want, and considering the MASSIVE success of the game in Japan, there's absolutely no reason for them to change that stuff for us.
They are certainly trying to make the game more new player friendly, but that's not nearly the same thing. Health Bars, True Lock On, etc., are all things that I will be surprised if they ever happen, because really they hurt some of the fundamental concepts of the game
