Loaded Nachos

One of the greatest things about Nachos is that they are messy, yet taste so good. There are many variations of course, but this one had pictures that were tasty so I just had to make this.

White Onion
Ground Beef
Cumin
Paprika
Chilli Powder
Salt and Pepper
Tomatoes
Cilantro
Jalapenos
Lime
Mozza and Cheddar cheese
Avocado
Chips

 The Building

Olive oil, then soften up the onions. I had most things diced ahead of time, especially the onion so as to not get overly emotional over cutting onions...

 Cooking Onions

Now time to drop this beef and mash it up real good.

Adding in Cumin, Paprika, Chilli Powder, Salt and Pepper. Forgot to buy crushed red chillis! But that's fine, all this other stuff makes up for it. At this point I could add some beans, but I am not too keen on them and it makes people fart all day long anyway. Anyhow, afterwards this is mixed and then some hot water to simmer.

 Spiced out

So here is diced tomatoes, diced white onions, chopped cilantro, and a lime cut in half, going to be squeezing out the lime juice and mixing it. I could have diced the jalapenos, but I like em this way.

 Pico de gallo

Everything is gathered now, Cheeses, Chips, Beef mix, pico de gallo, and of course, the goodness of Avocados in that bag. I think I may need a bigger plate.

From there, layering chips>beef>cheese for about 4 layers. I think I need a bigger plate.

I melted the cheese for a bit, and then finally getting some Avocados on there, certainly shaping up good. I should get a bigger plate.

Finally, adding on the pico de gallo, and this thing is standing tall. I really need a bigger plate.

Mmm definitely enjoyable. A bigger plate would have helped, but it was all right, staring at that massive thing and chipping away at it bit by bit, cannot go wrong with Avocados!

The only part I don't like about loaded nachos is when they pile up the chips and put everything on top, because then there is nothing on the bottom/center chips. Plus if you let them sit they can get all soggy.

Sounding good right about now. Time to buy Tostitos!

Very nice! Something I like to do before cooking ground beef is, I take the meat and smash it in my hands. When you cook it, the beef won't be stringy, but more so the way you find it in tacos or chili. It takes more work, but I guess it's just the way I prefer it.

So when I was making this again, I did try breaking up the beef before frying it up, and it worked great, but best of all it gives the personal touch (no pun intended, hehe) to the meaty goodness .
