Ahhhh. I just thought I'd share, cause I like to cook and this something I'm cooking for the firs time!
Making KimChi, when to H-Mart and got stuff to make it today. 
All korean stuff, all good.

You don't cook Kim Chi, silly. What kind are you making? The kind my mom makes = pickled cabbage, and she does use a lot of pepper paste or whatever. She does use a lot of peppers to add the spicy flavoring to it, but she also uses a lot of vinegar and water. It's mostly sour more so than it is spicy, and it's not too salty either. There's different ways to make it, I'm assuming you're using radishes and/or turnips?
Oh, and this is the type of Kim Chi that my mom makes. It looks exactly like that! Google'd.

I've only had KimChi that was already made, and that was only like once or twice.
H-Mart is great though. Get our curry from there... and mochi, which I still haven't eaten after like, months...

Well, the ones some Vietnamese people makes it = sour + spicy. But I think most traditional Kimchis are more like spicy+salty, I've tried daikon-kimchi, and the ones my American friend made (whom, he learned from his grandpa, which learned it from a Korean person) was really salty and spicy. Not like the ones my mother made. So it depends on the person.

anddddddddddddddd, It didn't taste too good so I hope it tastes better after it ferments for a week.
I also made this stuff called 오징어채 무짐 which is like, dried squid in a red pepper paste sauce.
Soooooooooooooo good.
Though, I'm mad. Apparently, if your bill at H-Mart exceeds 50dollars you get a free Korea! world cup shirt.
My bill for $44.

And I can see kimchi being salty, the website recipe that I used to make it had me soak the cabbage in salt walt for 1.5 hours.
changing the water every 30minutes, and using about 1cup of salt for this whole batch (Which was made with 10lbs of cabbage.)

It's usually salty, but the dominating taste is sour, with some spice in it. Maybe I just don't like sour cabbage.

With the way my mom and friends makes Kimchi, you have to let it ferment in a jar filled with vinegar or .. something. My mom has her lid tightly shut closed, and she keeps all of the cabbage in the jar for about half a week up to a week before we start eating. It's not really Kimchi til it ferments really well, which can take anywhere from half a week, up to 2 weeks, depending on how much cabbage and/or turnips you are fermenting.
I've seen my mom made Kimchi, so I can make it, myself, but it's really tedious. She doesn't change the water or anything, but you have to be precise to get the right flavor.

Oh, I know what the dried squid stuff is, but I always thought the spicy-sauce was supposed to be dipped with, and not used as something for the squids to soak in.  Looks like you did a great job with the Kimchi, because it looks accurate and correct to me! Good job, bro!!!!

Thanks, the squid is so fucking good.
Like, the dried squid alone without the sauce is delicious.
But the sauce isnt just hot pepper paste, theres some other small liquids I had to mix in too.
I fucking love my kimchi container cover.
