I think I figured out the grey haired Hilla.

She's not aging, she's undead.

Hilla seems to have an undead theme going on, her skeleton minions, all the ghost NPCs in Aswan, she casts Zombify (Although this might not count, most of the Black Wing bosses use Zombify too.), her eyes being white in the second form, etc.

So I think Hilla is a necromancer, and she turns herself undead as a last resort.

Hillia is the hottest boss ever. I wanna see her make out with future Cygnus..... JK

The storyline tells you that the Black Mage gave her eternal youth. As you defeat her, you strip her of her powers (inb4 joke about strip) which also means that she would age again. So, she would rapidly age until she turns to dust.
