Mechs, Wild Hunters, Evans mainly. I mean, do they still transform into the same Warrior, Mage, Archer, Pirate and Thief? Won't it make for some really awkward looking stuff? Like a one-handed sword user using Aran skills along with flying. An Evan casting magic without a dragon. Helena riding a jaguar?!? A pirate with a small gun using cannon shooter and mech skills?

It's still adventurer-only. So, they don't work at all. (Actually I haven't tested Evan/Aran but I know for a fact Mechs can't do it)

They get the character sprite, but hold their weapons. ie Aran would become the warrior dude, but still hold a polearm. Not sure about wild hunters and mechs though.

From what I understand, the players' heads are transformed into the job's corresponding EF npc, and all equips except for those in the Weapon slot are aesthetically changed to match the npc. That's why shields and Kataras don't show up on the player's sprite in EFPQ. As for Wild Hunters and Mechs, I'm sure their mounts work, and Evans are able to keep Mir with them.
You can take this with a grain of salt though, as I don't play KMS.

I think it's more of a hat that covers their head, kind of like how Scar and Targa helms do, because when I use Dark Sight on my dual, I can see her eyes behind the 'NPC' eyes.

All classes can do it. They're transformed into the transformation for their class. It doesn't really look awkward, but that's my opinion.
