If i'll become ua ice mage, that flame gear stacks with ice demon [4th job]?
i mean that i use flame gear, and the monster is flaming, than using ice demon, it will do more damaga?

Yeah, all DoT effects stack (unless they're the same, like 2 thieves casting Venom, only 1 Venom effect can be active afaik).

What happens is that your DoT damage number will get higher when you apply more then one DoT effect.

Yes but I don't suggest making a UA mage if your planning on using flame gear for late game bossing purposes.
*Which seems to be the case when your asking about it stacking with ice demon.

The mage revamp may alter it though so I would wait until then.

I agree, it's like advocating the use of poison breath as a F/P later on at 4th job for more DPS. The DoT is so small that it's actually better to keep spamming your main 1v1 skill and even if it would increase your DPS, it's by so little that it's not worth the bother.

Flame gear will get buffed in the Jump update though, so it is still a better choice than UA thief or bowman.
