You can get 2 professions, 1 gatherer and 1 producer would be the best route. I'm not sure if you HAVE to get a gatherer, but I know you don't have to get a producer.

Probably just for that one profession. Maker, if it still exists, probably still requires a stone. Must say though, that's the first compelling reason I've seen to choose machinist...

According to spadow,
With Blacksmithing, you can make unidentified items without using a potential scroll.
With Alchemy, you have a chance to get an unidentified item by combining two of the same kind together.
