My screensaver never came on when MS was up. No idea about sleep mode, however.
Unless you mean you're alt+tabbed out of it, then I have no clue.

Isn't it easier to just turn off your monitor when you are out of your computer and disable all energy saving options that change your computer state?
That's what I use.

If you're using a lappy that's kinda not an option. You can still disable the energy saver features though.

I put my laptop's monitor on sleep mode, but keep the actual computer from going into hibernation mode. It doesn't have any effect on me being afk and I'm still connected when I wake up in the morning.
I also alt+enter to put MS in window mode rather than keep it in full screen. I notice that when it's in full screen mode and my computer prompts random updates, it tends to lag me out because it tries to force minimize MS.

A screensaver won't disconnect you. Turning off your display won't disconnect you. Putting your laptop to sleep will.
You can set your laptop to not go to sleep when you close the lid in power options.

Uhh maybe I'm missing something, but how's closing the lid make it more of a fire hazard?
It doesn't affect ventilation, it just turns off the display and saves space.
