I was hoping they would let us pick them up and it will fly to make people glide in the air like in zelda games.

But from that caption, it sounds like they walk around during the stage, and if you hit them by accident all hell breaks loose.

It is obviously a trap, you attack the cucco expecting a mad flock of cuccos, and instead you just swap bodies with the cucco. That would be pretty neat too.

Or they could do both if they really wanted too.

Looks like they also pop forward a bit with the outlines, closer to the camera I mean. Probably just a visual trick from the slightly larger models the outlines cause, but still neat.
