Yet when I kill them, I see nothing in their inventory (aside from advanced arrows such as Elven/Glass) that should allow them to dish out that kind of damage against me. Is it like the game is considering some of the enemy archers to be at Master level or something? I know it's not me being unlucky enough to be hit by crit arrows (if enemies can land crits on you in the first place), unless I really am that unlucky.
For reference, I have 300 health (50 of that fortified), and 160 defense. I also have something like 110% bow damage on the rest of my equips.
On my alt, I'm getting killed more inside dungeons by bandits and Draugr Overloads more than anything else. If I sneak + bow/arrow method, I do crit, but it's like a minor scratch to them lol. I focus most of my points upon leveling up to Magicka + Stamina too, and rarely health, since I want to challenge myself a bit more (that and I use a lot of Destruction on my alt). On my main, I haven't had too many issues, but if it makes a difference, main is like lv 52 or something, and my alt is like 27.
I think it just depends on your playstyle. I read somewhere that the game changes how the enemies approaches you or something based on how you play your character. So if you're like me and use mostly close-range melee attacks, ie: dual-wielding blades, you're going to get wrecked by mages that are strong with destruction.

EDIT: Also, out of curiosity, what kind of mods are you guys using for your Skyrim? I'm personally using 2 mods at the moment:
a) TES V Savegame Manager
b) 4GB Skyrim (enables Skyrim to use up all 4 GB of your RAM, I have 8 gigs total here, so it's great since it won't eat up all of my mem)
c) No Helmet Mod
d) 4uDIKs RETEX (going to be getting this, nude mod lol)
