In the case of zhonya's: 1% more damage per second. It's adding roughly 37% more damage to his despair (going from 2.7% to 3.7%). I get more defense. And I get to go invulnerable if something bad happens. Sounds like a lot of benefit.
K, Madreds doesn't work on most champs early game as a first item. It's a great late game item against tanky dps and tanks, but early game, you'd be better off going early wit's end if you want to up your auto attack damage with some magic damage. However even that damage is supbar compared to your aoe damage as amumu. It's never better to focus one target when you could be focusing down an entire team via the massive aoe damage that amumu's skillset gives you.
For Zhonyas, you have to remember that it will take a long time to farm up with one item that's rather useless for surviving, and the other with better tank options to build into. Now if you're up 10 kills and 20 assists with like 1 death or something ridiculous like that, by all means, get damage and pwn more. In almost all other cases, more resists, health, armor, etc. are going to do more for you. Your goal is to force the enemy team to blow you up, or you'll do massive DoT via crying and tantrum. The problem with going zhonya's first, or even second or third item, is that you can get better stats out of other items, for a fair cheaper price and more utility. Pick up a negatron and chainmail after you get your philo and hog or catalyst and you're already doing pretty well. Or straight up go aegis if your team needs it. Any of those options early on will beat a rushed zhonyas, and getting zhonyas after that still pales in comparision to grabbing a guardian angel, frozen heart, fon, banshees, etc. I guess you could go rod of ages or abyssal, but generally as amumu, you're not trying to carry via sheer damage, instead you're enabling others to get kills via your skills.
Edit: Also, as Ammumu, you should be tanking and peeling targets from your carries, zhonyas makes the opposite happen. Once you pop it, they focus down your carries instead of you. If you're carrying hard then I guess you could go it, but again, you should be trying to feed kills to whatever ad or ap carries so that they can blow up the enemy team even faster or get their late game items faster.
