It's random. It probably changed, but you just didn't notice. And then there's the fact that since it's random, it should randomly select the same color that it currently is every now and then.
If you look at Satellite's collage on page #2, you can see evidence of eye color changing for guys, and Alilatias' post above shows evidence for ladies.
