I don't know how to quote things specifically

To quote only a small section of a post, you have to go in and manually remove the bits you don't want, or you can chose to move the bits around using the copy and paste functions. If you want to quote multiple posts, then you can click on the icon at the bottom right corner of each post's perimeter. The icon looks like a small speech bubble with a quotation mark inside of it accompanied by a small plus symbol next it, if you click on the icon, then the plus symbol will become a check mark to indicate that you will automatically have that post put into your "quick reply" the next time you try to make a post.

And why don't Viaje and Eos like each other?

I can't speak for Viaje, but I do know that Eos dislikes the way Viaje argues. Not to dig up dirt or anything, but heres a quote on it:
