Just tested out DPS Udyr (with a little tankiness, but less tanky than my usual build):
Items: Wriggles, Merc Treads, Black Cleaver, Madred's Bloodrazor, Trinity Force, BV
Tanky build: Wriggles, Merc Treads, Trinity Force, BV, Randuins Omen, Guardian Angel (or FoN)
He does a lot of damage with this build (high damage output + attack speed), but sacrifices a bit in survivability (aka damage mitigation).
