Epic stuff uses class-specific gems + diamonds once you reach +6. All other rarities use onyx. Now:

Low level stuff requires onyx fragments (it's a small piece, hence fragment)

The stuff we can get right now requires crude onyx (it's not a good quality piece of gem)

The next level stuff, like say 32~ requires a higher grade of onyx called "Average onyx" (It's like half a piece of a gem)

The level after that, level 40~, requires average gems as well

The level after that, level 50~, requires "Quality Onyx" (It looks like a whole gem)

tl;dr: crude onyx is going to be semi-worthless like onyx fragments since you can't use them to upgrade higher level gear. Same with the class specific ones

so is it a good time to sell all my topaz and crap then? boss.
