He beat him using a plan, that actually worked. Uryuu plans are only temporary, shik gets the job done, the end. Having two immortal warriors, one who just needs a drop of your blood to kill you, is certaintly not easy to beat.

The hell does uryuu do besides 3 things? Shikamaru's technique is at a constant change as it relies on sunlight. Uruyuu just spams arrows, when that doesn't work, he tries to use a sword that's essentially the same thing. And if that doesn't work he has to set up this ridiculous "nuke" that doesn't even do all that much damage.
