Eh you don't get Sunfire on Cho'Gath for the HP, you get it for the huge DPS it can output in a team fight compared to a Thornmail. There are times it's better to get a Thornmail, but a hugh Cho'Gath has a huge Sunfire radius, and being in the middle of a team fight, i.e. where you should be, will rapidly do damage to everyone. It really does depend on team comp though. Sometimes a Thornmail will get you a higher output if you're getting focused by auto attacks and kited by Ashe or someone like that.
