Start with everything at level 5, but with all your pokemon having their moves still would be cool.
Or, you start over with a starter from the next region, go through the game, restart like that again at the next region, and at the end, pick which pokemon you'll use for the elite four/champions. Kinda like what ash does in the shows.
It would be cool, but I always like battling at high levels, like b/w. I guess it wouldn't really matter though.
