there is only a 2 dex difference between a no-dex and a reg-dex?

Err, no. There is a 2 LUK difference between a UA dexless Night Lord and a traditional dexless Night Lord at 200. Regular DEX implies that you followed the standard build adding DEX to base. You'd have 160 DEX at 200, regardless of being UA or not, if you do the regular DEX build.
