It is hard to explain because it's just something some of us have learned while growing up without really even realizing it.
I'm more passive in expressing my opinions, so if I'm "talking" to someone I don't really care/want to talk to, I usually don't face them directly, looking off somewhere else rather than at their face. Or, I respond with concise statements, as you laid out. In essence, I try to give them the "cold shoulder" without leaving them too "chilled".
Or you could just flat out tell your grandpa you don't like talking to him because he makes you feel 'X'. He's family, and while we may offend each other sometimes, that fact doesn't change. You can still be cordial to each other without engaging in conversation.
