I'd never stack Warmog's, but getting one after you've got a pretty good armor/magic resist isn't a bad idea at all. Alternatively, if you're curbstomping the opponents, an early Warmog's makes you nigh impossible to kill without a 3 or 4 man gank. And by that I mean a Warmog's by lvl 11, which is pretty difficult to do, albeit not impossible if you're doing that well. The way I look at it; Cho'Gath and Nunu are great Tanks that can still do damage with their skills, or you can go AP with them and they become scary casters. Since I prefer to tank with Cho'Gath, that's how I play him, but I know I could go AP with him pretty easily if desired.
