a couple different options, standard tank and super annoying tank who does a bit of damage.
I mostly just go pure tank,
merc/swiftness/mobility all good options, alistar with movespeed is super scary.
banshees(helps a lot with mana issues)
force of nature(more movespeed!)
sunfire
frozen heart
Those four are the items I find myself with the most often. Other items like randiuns omen, thornmail and even abyssal scepter are good too.
The other popular build is to get an early sheen and boots of mobility(not always but very common in this build) and go around ganking and just pissing people off. Just build normal tank after sheen and boots and then get tri force towards the end. A few I have seen take it a set further and go AP with lichbane, his headbutt and knock up have 1:1 scaling and just use his ult to survive.
Flash is a must, other summoner is a lot more open. Teleport is common, have your teammates ward the enemy side of the lane, teleport in and headbutt towards your tower then stun, really fun way to gank. Alistar is really mana intensive as well, I couldn't imagine playing without mana regen runs. Cooldown reduction is also really strong.
