The importance of the HP loss depends on whether you're making a Gunslinger or an Infighter. Obviously, if you're going Gunslinger, you'll want that extra HP.

Pirates get 20-24 (same as archers/thieves). So you'll be missing out on 20*8 HP per level = 160 HP if you wait to level 30 to advance to first job. It's your judgment whether it's worth it.
HP gain on job advancement is static and based on the subclass you choose. Fighters get more HP than other warriors on 2nd job advancement, but the same HP growth.
