Why would that hurt a server? Inflation is only dangerous when it widdles away monetary reserves. In a new server, massive inflation would make buying potions - which are now much cheaper - easier and it would benefit everyone. After a while of Meso Sack spamming, it would become a bad deal and less people would buy it. Inflation would decrease to healthier levels until the sacks are worth it again, and the cycle continues until the event ends. Then Meso sellers get going and things go downhill from there.
