If HP is so important, why on earth are you skipping Shield Mastery? Even on a low-str White Knight, you'll have around 800 base defense, which becomes 2400 when maxed Shield Mastery is in use.
That means you're taking about 400 less damage from every hit.
I'm expecting my Paladin, post-BB, to have approximately 2200 base defense, which means Shield Mastery is a whopping +4400 def boost. That's at least 1100 less per hit against any physical attacks.
