I've been patching as many spots as I could in an attempt to help, and honestly, life won't give me enough time if we have to restart. I know majority rules, but I think the server should be closed until the Halloween patch, then re-opened with either current or a day and a half ago's data (if you have it). Stone can be replaced since admins can produce it. And hills can as well. Take a look at the random fountain with the arrow pointing at it north of spawn. I fixed the landscape there and left the grief cavern below.
Also, if nothing else when building new structures/repairing old, line the walls with obsidian before covering with the surface blocks of choice. I was told TNT doesn't work on them, so while griefing would still be possible, you'd be able to repair with only one surface of blocks. If nothing else, having a backup floor in place never hurts.
