No particular order:
Europe has too many countries, so I'll lump them together:
EU : The Euro will make visiting half a dozen countries awesome. Coming from the US, the idea that 500 miles will get you into a new country or two is mind boggling. The raw history... I could spend a month doing this and miss out on so much. Italy, Germany, France, Switzerland... The list goes on. I don't actually know what is and isn't in the EU... I should look that up.
New Zealand : I went here when I was in elementary school, but I couldn't really appreciate much of it. Awesome vistas and just a unique place to be. I hear the skiing is nice too.
Russia : Accents are awesome. So much history in this massive country that spans two continents. I know next to nothing from History Class about it, so learning would be pretty fun.
Japan : This place is huge when it comes to game development, which is one of my interest. I'd stick out like a sore thumb though.
NonEU Countries : Don't know any off of the top of my head, but I think there's a a dozen or so.
