Alginate (Pronounced "Al-jin-eight") is extracted from Brown Algae. Alginate is a useful thickener used in Ice Cream to thicken and reduce the size of ice crystals in it. Alginate is also used for making a food source for bacteria to grow in petri dishes (ive taken microbiology)
