Weakness to Rock sucks, but no one cares about Flying and Poison weaknesses. Electric resistance is nice, and the Bug and Grass resistances aren't terrible.

STAB Coverage:
Super - Water, Ground, Rock, Steel, Bug, Ice, Grass
Neutral - Normal, Flying, Fighting, Ghost, Psychic, Dark, Poison, Electric
Resisted - Dragon, Fire

The only Pokemon that currently resist the combination are Giratina, Moltres, Ho-Oh, Blaziken, Infernape, Heatran, Houndoom, Houndour, Latios, and Latias.

There was a fire/grass type made in Create-a-Pokemon, let me go check how well it did.

EDIT : Yeah, like you said, fire/grass is a good defensive combination, and its base stats were assigned as such. Think Hippowdon, but with higher stats all around. The type combination has been proven to work, at least.
