It's this magic formula that either makes or breaks. You add an ounce of extra fish sauce, you're dipping in fish sauce, You add an extra spoon of sugar, you're dipping it in pure water.

But that's a pretty general dip used for almost anything Viet. For spring rolls it's best that you use a different sauce. Maybe Khoi knows about - it's a black sauce, made from cooked housin sauce. Usually if you order for spring rolls at a Viet place they'll give you this sauce sprinkled with some peanuts.
