Just as if I asked you 'Comment ça va?' or 'Ça va?' like 'How are you?' or What's up' in english. They're just phrases you'd use in every common situation.
que fais-tu is like a literal translation meaning "what do you". Que est-ce que tu fais? literally means "is what you are" or if you know what Que est-ce que means then "do you are" sortof. Anyways Rob is right. Ça va is the informal and Que est-ce que tu fais is the formal.
