Turbinates regulate the air flow through the nose, they're just blocking everything. The procedure is quite simple; put me under, shave the turbinates down, I wake up.

To taste food....
My friend and I were talking about this today, and we're both people who love to cook. When she heard about the condition, she winced saying she felt that would be almost as painful as being blind. To be blind to the wonders of food is just heartbreaking to me, and this is one of those times I'd send money if I was omfghax0rz rich with irl meso. Of course, the choice is all up to you (and you ask the great question: Would I want to experience taste and potentially hate something I love when I already get by with texture?), but after tasting food my whole life I can't imagine the rest of my life without the sense.
Yea man, I say go for it. You're lucky it's not nerve death; gene and stem cell therapies won't be available for decades, nor would they be that effective on someone who has already matured into adulthood. I, as a food connoisseur, really really really really think you should seriously consider the operation.
