You're stuck in this belief that what we see is all there is, instead of it being condensed for the players sake. The dolphin doesn't travel instantly, we just don't see the trip. The few seconds of black screen is still more than an hour long trip in their time (based on my made-up time comparison.) The same applies for the cab rides on victoria. Just because we end up there within a second doesn't mean that the cab didn't DRIVE, it just means we didn't SEE it drive.
Think of it like this... if you watch something in fast forward do you think you can see everything that's going on? No, you can't. So if we're watching their days in a matter of seconds or minutes, of course we're not going to see every detail. Maps might seem paradoxical to this timing but you'd have to believe that if this were a real world, the maps and areas would be a lot larger than what we actually see, therefore making the fact that you can zip across a map in a seconds make a lot more sense.
Or even better, it's like a montage. Things happen really fast in a short amount of time.
