Oh my god, I had to mute the first two videos. The supernerd commenting was driving me crazy. But I lol'd heartily at Dracula throwing his cup at him.

I lean much more towards long, intense boss battles rather than the cheap thrill type bosses. RPGs typically have the best bosses, especially compared to most adventure games.
Dullahan - Golden Sun: The Lost Age is another boss I never got tired of fighting and still lost to sometimes. There's many different strategies to beat him. He's a lot of fun and can be very frustrating (which I love in a boss).
I haven't played TP in over a year, but those were some "omgwtf" moments. Oh yeah...speaking of which this right here is the best boss fight in Twilight Princess. Second is probably Zant's insane breakdown.
Golden Sun also had really hard boss fights if you weren't prepared. Star Magician is one of them. F'uck that guy.
