I really need to get to work on mine, since I wasn't as free as I expected last weekend; I can definitely have it ready in the next few days but I just need to sit down and work some things out. I'd say to expect signups a day or two after this one ends.
I'd definitely be into a GoT/ASOIAF game. I second what Mas said, though, especially as the Wall's characters barely count as named characters for show watchers, so getting stuck with a more minor character will be that much less fun if you don't even recognize them.
