Bikes are already kind of being phased out in favor of karts. It's mostly due to the courses and coin / item placements favoring outward drifting and the fact that bikes don't give any sort of speed boost at all, while some karts (Mach 8, Golden Standard, etc) give +0.5 speed.
They're still good for GP though, but if you plan on playing online for a long time then you'll want to prefer karts.
Bikes are pretty much niche choices now. Few courses favor their inward drifting, but majority favor karts.
