Except you wouldn't get the % Ignore DEF because that a stat the item has on average (It's not 5% (0 + 5) or 10% (0 + 10), it's just 5% and 10%). You can only transfer the above average stats.

Just from you skimming the info, [your personal opinion 100% not expecting any concrete answers], can you justify turning a root abyss set piece into sweetwater instead of a empress gear? Because what you just said seems like empress would be best due to cost efficiency and ease of acess.
