The codes are actually correct, it's the rewards that are visually glitched. For example, I got a fafnir 1h axe yesterday (that I didn't redeem). When I logged on earlier today, it said I had a fafnir dagger in my vault, but I received a fafnir 1h axe (the correct item) when I redeemed the code.
I think doing more spins should be fine, but unless you know what you have in your vault from earlier spins, it's better not to redeem any coupons since you can accidentally redeem time sensitive codes like 3x coupons.
