First of all, the hidden cloud also had Yugito, the 2 tails Jinchiuriki, who could also completely control her bijuu just as much as Bee. what this mean is that the hidden cloud didn't "get lucky", they developed a method to tame the Bijuus which they passed down between each other and eventually to Naruto.

They did get lucky though. The 3 previous 8 tails jinchuriki who weren't able to control/talk to the 8 tails like bee does. Plus, they explicitly said that Bee is one of the only 4 people in history to control a tailed beast.

Yes the page supports the idea that she probably oculdn't control it right away. This wouldn't be a problem if she didn't try to, otherwise all the other Jins who were children would immediately have been taken over by the tailed beasts when they firs ttried to use them.

Presumably we can include naruto so that its 5 people now. Still: the point is that none of the other jiinchuriki (including the other cloud jin) had the problem with randomly bursting into tailed beast form for no reason (other than gaaras aforementioned psychopathy due to his own fathers repeated attempts to murder him aside)

As for everything else, it all comes down on what type of seal there was on Rin. Maybe they weren't just planning on leaving her there and expecting the seal to break, maybe they had the means to trigger the seal's break. There's also the chance that unlike in Naruto's case, where the the seal had been developed by the Uuzumaki clan and therefore was somewhat common knowledge among the hop tier of the village, this was an unknown seal that they couldn't just fix without risk.

There is no reason to think anyone has the ability to break a seal without touching the person (like jiriya did on naruto). Still, you know what a good plan would be that didn't involve suicide? simply NOT GOING BACK TO THE VILLAGE WITHOUT WARNING THEM. Kakashi sends a message ahead saying they need a specialised sealing ninja to come out to somewhere else in the fire country. He's a highly trusted Jounin at this point, of course he would be believed if he sent a message back saying he had a fellow leaf ninja with him who had been turned into the 3 tails jin. And as we were told the ninjas following them were explicitly going to let them escape, there is virtually no way the plan could have failed.

For that matter, we also know that konoha had hidden safehouses scattered around (because sasuke restocked at one of them at some point earlier). Those would make a great place to wait!
