If you're paranoid about the collateral, do it all in one trade. I made my buyer put in max mesos + 159 MMB's in a direct trade. If 9 trade slots isn't enough, you could always have him trade equips from the FM that you can liquidate easily (such as a clean Empress dagger or such).
Just make sure you get p/c's on everything or browse the FM a few days before to get a grasp on some common prices.
