Back on-topic, I think that varying sub-types is a neat idea, but with as many Pokémon as there are, it seems like it would be too much of a hassle for the player to deal with in all honesty. Not to mention that not only would breeding have to be done for nature, moves, etc, but breeding for the right type as well? And let's not even touch the implications that would mean for the competitive scene. I honestly can't see a valid reason to justify that mechanic in my opinion at least.

It doesn't necessarily need to be as complicated as it sounds. For example, the typing could be passed down by the father along with moves and other anomalies. (Bug/Dark Parasect male mated with Bug/Grass Parasect female would produce Bug/Dark Paras)
This would be huge for both in-game and metagame players and it would give a lot more viability for a lot of Pokemon that are typically not well regarded.
Bunch of possibilities would include:
Water/Steel Blastoise (Seriously, it has motherfucking iron cannons)
Fire/Dark or Fire/Psychic Ninetales (To play on its mischievous or spiritual relationship to mythology)
Fighting/Flying Farfetch'd (Samurai Duck COME ON)
Bug/Fighting Ledian (Dem punches)
Psychic/Dark Girafarig (More prevalent hind head)
And my favorite, MOTHERFUCKING BUG/PSYCHIC BUTTERFREE.
