When I'm not being fed by various student groups, I eat fried rice for dinner nearly every day because it's the only thing resembling a decent meal that I know how to make. While this isn't a problem in itself, I'd like to change it up a bit. Sometimes I buy frozen microwaveables, but this isn't ideal.
Any suggestions?

Scrambled eggs are pretty easy. Omelets are a step up from scrambled eggs, but again not that difficult. Pasta + sauce of your choosing isn't too hard, assuming you know how to make pasta.
Also, white rice yes?

Chicken is your best friend seriously. I get a pack of chicken breasts every like 3 nights. Dry it with a paper towel, put some pepper on it and cook it, all it needs. I normally add broccoli with some cheese on top.
Any type of pasta, shrimp scampi is one of my favorites lol.

Pork adobo is +1 on the easiness scale compared to chicken.

Doing pasta and rice its basic, since you can get easy solutions like a can of tuna with both or some cheese with the pasta and such.

Although I'm a culinary student, I don't cook to impress myself. The majority of what I end up making is simple, inexpensive, and quick to prepare.
Shop with the versatility of ingredients in mind. If you buy linguine, think of them whole with jarred Italian sauce for a pasta dish (Newman's Own Marinara is amazing), shattered into bouillon and vegetables for a soup, or broken in half with the same vegetables, soy sauce, and ginger to prepare a simple lo mein.
Try making things like chili (which can literally be made with five ingredients) in large batches and freezing whatever you don't eat in individual serving-sized tupperware. Remember to let whatever you make (assuming it's a hot item) reach room temperature before freezing it as to not spoil the dish and contaminate the freezer.

Actually you can do them even easier in an oven, just butter two slices of bread, place them butter down on a cookie sheet, add a slice of cheese to both, cook a few minutes while they toast and the cheese melts and then slap them together cheese to cheese. Cooks more evenly and thoroughly, and quite yummy, plus you can do several at once better than you can on a stove as long as your oven and cookie sheet are big enough.

Meat and rice. Just use onion soup mix for seasoning.
Chile is pretty good, also easy to make. Takes a little while though.
Shepherd's Pie is also quite easy to make and is good (if you're irish).
Pasta with tomato sauce. Add meat if you want it.

Beef (mostly steak and tenderloin variety)-
1. Salt, sugar, black pepper, soy sauce, marinade. Mix all with your fingers
2. Coat in corn starch
3. Coat in oil
4. Let it sit
5. Cook with minced garlic and some thick slices of ginger
6. ???
7. Add a bit of water while cooking to prevent it from drying out before it's completely cooked. It also helps create a sauce
8. Congrats, you have a delicious meat dish
Preparation for chicken and pork are pretty similar, just adjust flavoring a bit, and make damn sure the pork is well cooked. Cut a random piece of pork in half when you think you're close to finishing, and check for any signs of extreme pinkness. If anything more than a slight shade of pink, it's not done.
Chili is rather easy to make as well, you just need more preparation time than actual skill.
Learn to stir fry various vegetables. Honestly, I hate American cooked vegetables. Who the heck just boils it in water, or cooks it with butter? Salt + sugar + soy sauce works wonders, and has it tasting good without being bad for you. Good stir fry vegetables to start off with are green beans, broccoli, and cabbage. Bell peppers are good too, as are white/red onions.
MUSHROOMS. Excellent on it's own, but works great in adding tons of flavor to just about any food item. I prefer the standard white button mushrooms.
There are very few vegetables you should ever boil, because it adds minimal flavor. The only one I know off the top of my head is lettuce. Even then, add some oil, salt, sugar, and soy sauce to the boiling water so at least the lettuce can soak the flavor in a bit.
You should try to make steamed egg custard if you haven't learned to do so by now. The version I eat and make isn't made sweet; it's more of a lunch/dinner dish. Ingredients are: eggs (obviously), water, oil, salt, sugar, white pepper, dash of MSG, soy sauce. You'd want plenty of water, around 2 cups for every 4-5 eggs; have the water be hot if you have a water cooler. because the hot water makes it easier for the egg to cook.
In case it's not already apparent, soy sauce is a rather staple cooking ingredient for me and my family. My 2 cents on easy yet good food dishes.

It was to enjoy Shepherd's Pie that you had to be irish.
I have not yet found a non-irish person (or at least partly irish, like me) who enjoyed it.

Ok I haven't read one lick of this thread aside from the OP.
Buying a jar of premade pasta sauce and boxes of different kinds of pasta can make a VERY fast, easy, and tasty dinner.
Taking tortillas and putting some pasta sauce and shredded chesse then baking at 425 for ~10 minutes makes easy cheap pizzas.
Chicken is pretty versatile, if you have raw chicken breast and old cornflakes you can bread it and bake it in about thirty minutes.
Ramen is pretty easy to spice up, dropping the liquid and making adding a bit of ketchup with the flavor packet is easy and tasty.
I've got some more ideas, but cba to get them all organized.
