In my searches to stop my computer from crashing due to these memory leaks, I found that x86 is 32-bit and 32-bit can not relocate more than 2GB memory into a single process. So I was wondering if I could switch to x64 which is 64-bit. And would I need to wipe my entire computer, or just reinstall W7 with no danger to any of my files.

Use windows backup onto an external hard drive, re-install into x64, then load the backup.

You have to wipe your computer to go from x86 to x64.
With 64-bit OS, 32-bit programs are still limited to 2 GB of memory allocation. That doesn't change. The OS and all other 64-bit programs will be able to allocate more than 2 GB, however.
