the displayed damage values? A monster that has 1000 HP has the possibility of surviving a hit over 1000 and being killed in one shot with a hit near 600. Is there no way for them to reflect a more accurate picture of the damage we actually did?

I've noticed that I'm having this problem in KMS too, though it's more like misses dealing damage for me.

Doesn't that only happen when you lag? I boss on two different computers at the same time pretty often...never seen anything incorrect.
