is there a program that records notes as it is given sounds? like it records it on a treble cleft as the sounds come

You're looking for something like Finale. I don't know what the free edition would do for you; if you're willing to shell out some pretty dollars, it'll definitely get the job done.

Or if you have less scruples, you could head over to some shady site and get the full version for less.

Doubt it, as they haven't hinted at anything like that (and iPod touch/ iPhone apps over $5 tend not to sell very well).

My suggestion is that you take a laptop with you. A netbook can be had for under $400.
