All quest other than Event quest count correct? Thanks

I do remember having some event quests count (such as the first spirit week's scrolling quest, VIP rocks, etc) from time to time. The count have been fixed later on, though.

Anything that's not under the Event tab, I believe.

Yup, also Santa Claus in-the-white-suit NPC keeps count for you, so you don't have to count them yourselves...

wait what npc? I was just about to ask a question about how exactly quest are counted, but i guess this npc saves me the problem. Hmm guess ill search around and see what i can find.

The other person is wrong. If you hit the medal key on your keyboard (whichever it may be), then accept the challenge for Quest Specialist, you can check your progress that way.
